Wash and chop cauliflower into 1-inch florets. Ensure all florets are approximately the same size for even cooking. Pat dry thoroughly.

In a large bowl, whisk together flour, water, garlic powder, paprika, salt and pepper until smooth. Add cauliflower florets and toss to coat evenly.

Preheat air fryer if required by your model. Place coated cauliflower in air fryer basket in a single layer and cook at 200°C (400°F) for 10 minutes, flipping halfway through. Cook in batches if necessary to maintain single layer.

Return cooked cauliflower to the same mixing bowl. Pour buffalo sauce over the florets and gently toss until evenly coated.

Return sauced cauliflower to air fryer in a single layer and cook for another 5-7 minutes until crisp, checking at the 5-minute mark to prevent burning.

Arrange buffalo cauliflower on a serving platter with your preferred dipping sauce (ranch or blue cheese) and accompanied by fresh celery and carrot sticks.
