In a large bowl, whisk together oil, honey, soy sauce, lime juice, mustard, minced garlic, curry powder, coriander, salt, and pepper until well combined.

Add chicken thighs to the bowl and toss until completely coated. Allow to marinate for at least 30 minutes or refrigerate overnight for maximum flavor.

Preheat a 6-quart air fryer to 380°F (193°C) for at least 3 minutes.

Arrange chicken thighs in a single layer in the air fryer basket. Cook for 14-15 minutes, using tongs to flip the thighs halfway through cooking time. Brush any remaining marinade on top after flipping.

Remove chicken from air fryer and serve immediately with your favorite sauce.
