Baked Lemon Butter Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 10 dark meat chicken pieces (drumsticks and thighs), trimmed of excess fat

→ Seasonings

02 - 2 tsp kosher salt
03 - 1 tbsp smoked paprika
04 - 1 tbsp Montreal chicken seasoning blend
05 - 1/2 tsp red pepper flakes

→ Sauce

06 - 2 tbsp butter
07 - 1/2 cup minced red onion
08 - 1/2 cup chopped flat leaf parsley
09 - 1 tbsp minced garlic
10 - 1 cup chicken stock
11 - 1 tbsp fresh lemon juice
12 - 1 cup freshly grated Parmesan cheese
13 - 1/3 cup heavy whipping cream

# Instructions:

01 - In a skillet, melt butter over medium heat. Once melted, add minced red onions and sauté until fragrant, about 2 minutes.
02 - Add chopped parsley and minced garlic to the onions. Mix well to combine, then add lemon juice and red pepper flakes.
03 - Pour in chicken stock followed by grated Parmesan cheese. Mix thoroughly, then add heavy cream. Bring to a simmer for a minute, then turn off heat and allow sauce to cool slightly.
04 - While the sauce cools, season chicken pieces with kosher salt, smoked paprika, and chicken seasoning. Toss well to ensure even coating.
05 - Place seasoned chicken in a baking dish and pour the prepared sauce over the chicken. Bake uncovered at 190°C (375°F) for 1 hour and 45 minutes, flipping the chicken pieces halfway through cooking time.
06 - Switch oven to broil setting and cook chicken skin-side up until golden brown. Remove from oven, baste with sauce from the pan, and serve.

# Notes:

01 - For best results, allow chicken to come to room temperature before baking.
02 - You can substitute the Montreal chicken seasoning with any chicken seasoning blend or bouillon.
