Pour in chicken stock followed by grated Parmesan cheese. Mix thoroughly, then add heavy cream. Bring to a simmer for a minute, then turn off heat and allow sauce to cool slightly.

While the sauce cools, season chicken pieces with kosher salt, smoked paprika, and chicken seasoning. Toss well to ensure even coating.

Place seasoned chicken in a baking dish and pour the prepared sauce over the chicken. Bake uncovered at 190°C (375°F) for 1 hour and 45 minutes, flipping the chicken pieces halfway through cooking time.

Switch oven to broil setting and cook chicken skin-side up until golden brown. Remove from oven, baste with sauce from the pan, and serve.
