Brown Sugar Banana French Toast (Print Version)

01 - 1 loaf of brioche or challah bread, cut into 1-inch cubes
02 - 4 ripe bananas, sliced
03 - 6 large eggs
04 - 2 cups whole milk
05 - 1/2 cup heavy cream
06 - 1/2 cup packed brown sugar
07 - 2 teaspoons vanilla extract
08 - 1 teaspoon ground cinnamon
09 - 1/4 teaspoon salt
10 - 1/2 cup chopped pecans or walnuts (optional)
11 - Maple syrup, for serving

# Instructions:

01 - Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
02 - In a large bowl, whisk together eggs, whole milk, heavy cream, brown sugar, vanilla extract, cinnamon, and salt until well combined.
03 - Layer half of the bread cubes in the prepared baking dish, then arrange half of the banana slices on top.
04 - Pour half of the egg mixture over the first layer, ensuring bread is evenly soaked. If using nuts, sprinkle half over this layer.
05 - Repeat the process with remaining bread, banana slices, egg mixture, and nuts.
06 - Gently press down on the casserole to ensure all bread is submerged. Cover with aluminum foil and refrigerate for at least 2 hours or overnight.
07 - Remove the casserole from refrigerator and bake covered in the preheated oven for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown and puffed.
08 - Let cool for 10 minutes before slicing. Serve warm with maple syrup drizzled over the top.
