Carrot Cake Energy Balls Snack (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 100 g rolled oats
02 - 100 g finely grated carrots (approx. 2 medium carrots)
03 - 50 g shredded coconut, unsweetened
04 - 1 teaspoon ground cinnamon
05 - 0.5 teaspoon ground ginger
06 - 0.25 teaspoon ground nutmeg
07 - 0.25 teaspoon sea salt

→ Wet Ingredients

08 - 120 g almond butter or preferred nut butter
09 - 80 g honey or maple syrup
10 - 1 teaspoon vanilla extract

→ Mix-ins (Optional)

11 - 60 g raisins or chopped pecans

# Instructions:

01 - Finely grate the carrots and, if using, chop the raisins or pecans into small pieces.
02 - In a large mixing bowl, blend the almond butter, honey or maple syrup, and vanilla extract until smooth and fully combined.
03 - In a separate bowl, thoroughly combine the rolled oats, grated carrots, shredded coconut, cinnamon, ginger, nutmeg, and sea salt, ensuring even distribution of spices.
04 - Add the dry mixture into the wet mixture gradually, stirring vigorously until a uniform, cohesive dough forms. If necessary, adjust consistency by adding a small amount of almond butter or a splash of water.
05 - Fold in the raisins or chopped pecans to distribute them evenly throughout the mixture.
06 - With clean hands, roll approximately 1 tablespoon portions of the dough into compact balls. Place each ball onto a parchment-lined tray or plate.
07 - Refrigerate the formed balls for a minimum of 30 minutes to allow them to set and become firm.
08 - After chilling, serve immediately or store in an airtight container in the refrigerator for up to 7 days.

# Notes:

01 - For best texture, use finely grated carrots and avoid over-mixing after adding the dry ingredients.
02 - Energy balls can be frozen for up to 3 months and enjoyed straight from the freezer.
