# Ingredients:

→ Apples

01 - 2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and finely chopped

02 - 1 cup all-purpose flour
03 - 1/2 cup granulated sugar
04 - 1/2 tsp baking powder
05 - 1/2 tsp baking soda
06 - 1 tsp ground cinnamon

# Instructions:

01 - In a mixing bowl, combine the chopped apples with 2 tablespoons of granulated sugar and a teaspoon of ground cinnamon. Mix well and set aside for 10-15 minutes to allow the apples to release their juices.
02 - In a separate bowl, whisk together the flour, remaining granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
03 - In another bowl, thoroughly combine the buttermilk, egg, and vanilla extract.
04 - Gradually incorporate the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing; the batter should remain thick and slightly lumpy.
05 - Fold the apple mixture into the batter, ensuring even distribution throughout.
06 - In a deep skillet or pot, heat approximately 5 cm of oil over medium heat until it reaches 175°C. Test readiness by dropping a small amount of batter in—it should sizzle and rise to the surface.
07 - Using a spoon or small ice cream scoop, carefully drop tablespoon-sized portions of batter into the hot oil, working in batches to avoid overcrowding.
08 - Fry each fritter for 2-3 minutes per side until golden brown and cooked through.
09 - Remove fritters with a slotted spoon and place on paper towel-lined plate to absorb excess oil.
10 - In a separate bowl, mix powdered sugar with ground cinnamon to taste.
