Double Chocolate Chip Sourdough Bagels (Print Version)

# Ingredients:

→ Bagel Dough

01 - Self-rising flour, 1¼ cups
02 - Unsweetened cocoa powder, ¼ cup
03 - Granulated sugar, 2 tablespoons (optional)
04 - Plain or vanilla Greek yogurt, ¾ cup
05 - Sourdough discard or unfed starter, ¾ cup
06 - Chocolate chips, 1 cup (divided)

→ Homemade Self-Rising Flour

07 - All-purpose flour, 1¼ cups
08 - Baking powder, 1½ teaspoons
09 - Baking soda, ¼ teaspoon
10 - Salt, ¼ teaspoon

→ Egg Wash

11 - Egg, 1
12 - Milk, 1 tablespoon

# Instructions:

01 - Preheat oven to 375°F and line a baking sheet with parchment paper.
02 - Combine self-rising flour, cocoa powder, sugar, Greek yogurt, and sourdough discard in a large bowl until well mixed. Dough will be sticky.
03 - Turn dough onto well-floured surface and knead until smooth, adding extra flour if needed tablespoon by time.
04 - Flatten dough, add ½ cup chocolate chips in center, fold edges over, and knead to distribute chips evenly.
05 - Divide dough into 8 pieces. Roll each piece into a rope, form into bagel shape, and pinch ends to seal.
06 - Brush bagels with egg wash, sprinkle remaining chocolate chips on top, and bake for 20-22 minutes at 375°F.

# Notes:

01 - Must use Greek yogurt for proper consistency
02 - Can substitute sourdough discard with additional ½ cup Greek yogurt
03 - Best served warm with cream cheese or butter
