Healthy Turkey Shepherd's Pie (Print Version)

# Ingredients:

01 - 1 ½ cups russet potatoes, peeled and chopped
02 - 1 ½ cups cauliflower florets
03 - ½ cup grated parmesan cheese
04 - 1 tablespoon olive oil
05 - ¼ teaspoon garlic powder
06 - ¼ teaspoon black pepper
07 - ¼ teaspoon salt
08 - ½ cup low-sodium chicken broth

→ Filling

09 - 1 tablespoon olive oil
10 - 1 lb ground turkey
11 - 1 cup diced onion
12 - 1 tablespoon minced garlic (about 2 cloves)
13 - ½ cup diced carrots
14 - ¼ teaspoon salt
15 - ½ teaspoon black pepper
16 - ½ teaspoon dried rosemary
17 - ½ teaspoon dried thyme
18 - ½ cup low-sodium chicken stock
19 - 1 tablespoon tomato paste
20 - 1 cup peas
21 - 1 cup corn

# Instructions:

01 - Preheat oven to 350°F and grease an 8x8 or 9x13 casserole dish.
02 - Bring a large pot of water to a boil. Add potatoes and cauliflower florets. Boil for 10 minutes until soft.
03 - Heat olive oil in a pan. Brown ground turkey for 5 minutes. Add onions, garlic, and carrots. Cook for an additional 5 minutes until turkey is cooked through.
04 - Add salt, pepper, rosemary, thyme, chicken broth, tomato paste, peas, and corn to the turkey mixture. Stir until combined.
05 - Drain cooked potatoes and cauliflower. In a large mixing bowl, mash them with olive oil, garlic powder, pepper, salt, chicken broth, and parmesan cheese. Use a hand mixer or stand mixer to combine.
06 - Layer the ground turkey and vegetable filling in the prepared casserole dish. Top with the mashed potato and cauliflower mixture, smoothing with a spatula.
07 - Bake at 350°F for 30 minutes until the topping is golden brown. Serve and enjoy.

# Notes:

01 - Feel free to add more vegetables such as green beans, ensuring they are defrosted and drained if frozen.
02 - Ground beef, ground chicken, or leftover turkey breast can be used in place of ground turkey.
03 - Any type of broth (beef, chicken, or vegetable) can be used. Opt for low or no salt varieties.
04 - Any type of potatoes, such as Yukon Gold or Russet, will work. Leftover mashed potatoes can also be used for the topping.
