In a large pot with a tight-fitting lid, heat a tablespoon of oil over medium-high heat. Add popcorn kernels to cover the bottom of the pot in a single layer. Cover the pot and wait for the popcorn to start popping. Gently shake the pot to ensure even popping. When the popping slows to about 2 seconds between pops, remove from heat.
