Herbed Couscous

1 cup couscous

1 1/4 cups vegetable broth

1 tablespoon olive oil

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh lemon juice
# Instructions:

Bring vegetable broth to a rolling boil in a medium saucepan.

Remove saucepan from heat, stir in couscous and olive oil. Cover immediately and let stand for 5 minutes until all liquid is absorbed.

Fluff the couscous gently with a fork. Fold in chopped parsley and fresh lemon juice until evenly distributed.
