Preheat oven to 425°F. Spray a large rimmed baking sheet with cooking spray. Melt butter in a skillet over medium heat.

Add minced garlic to melted butter and cook 30 seconds. Stir in honey, smoked paprika, salt, and pepper. Add carrots and toss in glaze, letting them sit 1-2 minutes.

Transfer carrots to prepared baking sheet using tongs, keeping sauce in skillet. Roast for 20 minutes.

While carrots roast, reduce remaining sauce in skillet for 2 minutes. After 20 minutes, toss carrots in reduced sauce and roast additional 5-7 minutes until tender. Optional: broil for final 30 seconds for extra browning.
