Preheat oven according to fries package directions. Line 2 baking sheets with foil and spray with cooking spray.

In a small bowl, combine all the seasonings (brown sugar, garlic powder, onion powder, chili powder, paprika, salt, and pepper). Lay the fries on the prepared baking sheets, dividing between the 2 trays. Sprinkle the seasoning over the fries on both trays, reserving ½ teaspoon of seasoning for final assembly if desired.

Toss the fries to coat with seasoning, ensuring they end in a single layer.

Bake according to package directions, rotating the pans in the oven if needed for even cooking.

While the fries bake, melt the butter in a medium skillet over medium-low heat.

Add the flour to the melted butter and whisk together, cooking for 1-2 minutes to remove raw flour taste.

Slowly whisk in the milk until completely combined with no lumps.

Let the sauce cook for a few minutes to thicken before slowly adding the cheese a little at a time, allowing each addition to melt fully before adding more.

Reduce heat to the lowest setting to keep the sauce warm but not cooking while preparing to assemble. If the sauce becomes too thick, add an additional tablespoon or two of milk. The sauce will continue to thicken as it cools.

Lay about ¼ of the fries on a plate and top with about ¼ cup of the cheese sauce. Drizzle with a tablespoon of ranch dressing, then sprinkle with a bit of reserved seasonings if desired.

Repeat the layering process for all portions.

Serve immediately with additional cheese sauce, ketchup, and ranch dressing for dipping, if desired.
