Slice 1 lb block of mozzarella cheese into thick, rectangular sticks about 7.5 cm long and 1.25 cm thick.

Prepare 3 separate bowls: first with flour, second with whisked eggs, and third with a mixture of panko and plain breadcrumbs combined with cayenne, smoked paprika, garlic powder, onion powder, salt, and pepper.

Dredge each mozzarella stick first in flour, then egg, then breadcrumb mixture. For extra crispiness, dip again in egg and breadcrumbs for a double coating. Place breaded sticks on a tray.

Freeze the breaded mozzarella sticks for 15-20 minutes to firm up the cheese before frying.

Heat 5 cm of avocado oil to 190°C (375°F). Carefully fry mozzarella sticks for 1-2 minutes until golden brown. Remove and drain on a wire rack.
