01 -
Preheat oven to 375°F (190°C). Lightly grease a baking dish. Pit and halve the peaches, then set aside.
02 -
In a medium mixing bowl, whisk together the flour, 2 tablespoons of the sugar, baking powder, and salt. In another bowl, combine the melted butter, milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. A few lumps are acceptable.
03 -
Take a spoonful of dumpling dough and flatten it slightly in your palm. Place a peach half in the center and gently wrap the dough around it, sealing well. Repeat with remaining peach halves.
04 -
In a saucepan, combine the remaining sugar, water, cinnamon, and nutmeg. Bring the mixture to a boil, stirring until the sugar dissolves. Simmer for about 5 minutes.
05 -
Place the dumplings in the prepared baking dish, seam side down. Pour the hot sugar sauce over the dumplings, ensuring they are well-coated.
06 -
Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the dumplings are golden brown.
07 -
Allow to cool slightly before serving. Enjoy warm with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
