Red Lentil Savory Pancakes (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup split red lentils (masoor dal)
02 - 3 cups water for soaking
03 - 1/2 cup water for grinding

→ Seasonings & Aromatics

04 - 1 green chili
05 - 1 inch ginger
06 - 1 teaspoon kosher salt
07 - 2 tablespoons fresh cilantro, finely chopped

→ For Cooking

08 - 2 tablespoons oil

# Instructions:

01 - Rinse and drain masoor dal and soak in water overnight or at least 4 hours.
02 - Drain soaked lentils and add to blender with green chili, ginger, salt, and water. Blend into a fine, pourable batter. Stir in cilantro and let rest for five minutes.
03 - Preheat pan to low-medium heat. Pour 1/3 cup batter and spread into a 5-6 inch pancake. Cook for 2-3 minutes, add oil drops, then flip. Cook another 2-3 minutes until lightly browned.

# Notes:

01 - Batter consistency should be pourable but not too thin
02 - Can be made ahead and stored in refrigerator
03 - Best served hot with chutney or sauce
