Reuben Bowl with Corned Beef (Print Version)

# Ingredients:

01 - ¾ pound thickly sliced deli corned beef
02 - 3 tablespoons olive oil, divided
03 - 1 small sweet onion, diced
04 - 2 garlic cloves, finely minced
05 - 1 teaspoon caraway seeds
06 - 2 10-ounce packages coleslaw mix
07 - 1 cup sauerkraut, drained
08 - ½ teaspoon salt
09 - ¼ teaspoon black pepper
10 - 4 ounces sliced Swiss cheese
11 - Green onions, green parts only, thinly sliced for serving

→ Thousand Island Dressing

12 - ⅓ cup mayonnaise
13 - 2 tablespoons sour cream
14 - 1 tablespoon ketchup
15 - 1 tablespoon dill relish
16 - 1 tablespoon sweet onion, minced
17 - ½ teaspoon Worcestershire sauce
18 - 1 garlic clove, finely minced
19 - ¼ teaspoon paprika
20 - Salt to taste

# Instructions:

01 - Cut the corned beef into ½-inch thick cubes.
02 - Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the corned beef and cook for 4-5 minutes, stirring occasionally. Line a plate with a paper towel. Once the beef is lightly browned, transfer it to the paper towel-lined plate.
03 - Add 1 tablespoon of olive oil to the skillet and add the diced onion. Cook for 2-3 minutes, or until the onion becomes translucent. Add the garlic and caraway seeds, and cook for 1 more minute.
04 - Add the remaining 1 tablespoon of olive oil and the coleslaw mix to the skillet. Stir to combine and cook for 6-8 minutes, until tender but still crisp.
05 - Mix in the sauerkraut, cooked corned beef, salt, and black pepper. Top with sliced Swiss cheese and reduce heat to low. Cook for 3-4 minutes, or until the cheese is melted.
06 - In a medium bowl, mix together the mayonnaise, sour cream, ketchup, dill relish, minced onion, Worcestershire sauce, garlic, and paprika. Add salt to taste.
07 - Serve the warm Reuben filling in a bowl with a drizzle of prepared Thousand Island dressing and a sprinkle of sliced green onions.
