Sourdough Cheese Crackers (Print Version)

# Ingredients:

→ Base Ingredients

01 - Sourdough discard (unfed starter), 200g (1 cup)
02 - Unsalted butter, melted, 2 tablespoons
03 - Fine sea salt, ¼ teaspoon
04 - Medium cheddar cheese, finely shredded, 1 cup (60g)

→ Optional Toppings

05 - Flaky sea salt
06 - Everything bagel seasoning
07 - Sesame seeds

# Instructions:

01 - Preheat oven to 350°F and line a baking sheet with parchment paper.
02 - Combine cooled melted butter with sourdough discard and salt, then stir in shredded cheese until well incorporated.
03 - Spread mixture very thinly on parchment paper using an offset spatula until almost transparent (approximately 11x14 inches).
04 - Lightly sprinkle with flaky salt or chosen seasonings.
05 - Bake for 10 minutes, then remove to score into squares with a pizza cutter. Optionally create center holes with a wooden skewer.
06 - Return to oven for 20 minutes or until golden and firm when tapped.
07 - Let cool completely on baking sheet before storing in an airtight container.

# Notes:

01 - Can use different cheese varieties like sharp cheddar, white cheddar, or parmesan (use half amount)
02 - Spreading thinly is crucial for proper crisping
03 - Continue baking if crackers aren't completely crisp
