Preheat oven to 350°F and line a baking sheet with parchment paper.

Combine cooled melted butter with sourdough discard and salt, then stir in shredded cheese until well incorporated.

Spread mixture very thinly on parchment paper using an offset spatula until almost transparent (approximately 11x14 inches).

Lightly sprinkle with flaky salt or chosen seasonings.

Bake for 10 minutes, then remove to score into squares with a pizza cutter. Optionally create center holes with a wooden skewer.

Return to oven for 20 minutes or until golden and firm when tapped.

Let cool completely on baking sheet before storing in an airtight container.
