Spicy Buffalo Cauliflower Bites (Print Version)

# Ingredients:

→ Main

01 - 1 medium head of cauliflower, cut into bite-sized florets

→ Batter

02 - 1 cup all-purpose flour
03 - 1 cup water or plant-based milk
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon smoked paprika
07 - Salt and pepper to taste

→ Sauce

08 - 1 cup buffalo sauce
09 - 2 tablespoons melted vegan butter (optional)

→ Garnish

10 - Fresh parsley or green onions, chopped

# Instructions:

01 - Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
02 - In a large bowl, whisk together flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
03 - Dip each cauliflower floret into the batter, allowing excess to drip off before placing on the prepared baking sheet, leaving space between pieces.
04 - Bake for 20-25 minutes, or until coating is crispy and golden brown. Flip florets halfway through for even crisping.
05 - While cauliflower is baking, combine buffalo sauce and melted vegan butter (if using) in a small bowl and mix well.
06 - Once cauliflower is done, remove from oven and toss in the buffalo sauce mixture until fully coated.
07 - Return coated cauliflower to the baking sheet and bake for an additional 10-15 minutes, until extra crispy.
08 - Remove from oven and let cool for a couple of minutes before serving. Garnish with fresh parsley or sliced green onions.

# Notes:

01 - Serve with vegan ranch or blue cheese dressing for dipping.
