Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.

Dip each cauliflower floret into the batter, allowing excess to drip off before placing on the prepared baking sheet, leaving space between pieces.

Bake for 20-25 minutes, or until coating is crispy and golden brown. Flip florets halfway through for even crisping.

While cauliflower is baking, combine buffalo sauce and melted vegan butter (if using) in a small bowl and mix well.

Once cauliflower is done, remove from oven and toss in the buffalo sauce mixture until fully coated.

Return coated cauliflower to the baking sheet and bake for an additional 10-15 minutes, until extra crispy.

Remove from oven and let cool for a couple of minutes before serving. Garnish with fresh parsley or sliced green onions.
