# Ingredients:

→ Potatoes

01 - 4 large russet potatoes

→ Steak

02 - 1 lb sirloin steak, cut into bite-sized pieces
03 - 2 tablespoons olive oil
04 - 1 teaspoon garlic powder
05 - 1 teaspoon smoked paprika
06 - Salt and pepper, to taste

→ Toppings

07 - 1 cup shredded cheddar cheese
08 - ½ cup sour cream
09 - ¼ cup green onions, chopped
10 - ¼ cup cooked bacon bits (optional)
11 - 1 tablespoon butter

# Instructions:

01 - Preheat oven to 400°F (200°C). Scrub potatoes under running water and pat dry. Prick each potato several times with a fork. Rub skins with olive oil and a pinch of salt. Place on a baking sheet and bake for 45-60 minutes, until fork-tender.
02 - While potatoes are baking, heat 2 tablespoons olive oil in a skillet over medium-high heat. Season sirloin pieces with garlic powder, smoked paprika, salt, and pepper. Add steak to the skillet in a single layer. Sear for 3-4 minutes per side until browned and cooked to desired doneness. Remove from heat and set aside.
03 - Once potatoes are baked, carefully slice them open lengthwise and fluff the insides with a fork. Add a tablespoon of butter to each potato and gently mash the interior.
04 - Top each potato with a generous amount of cheddar cheese, allowing it to melt slightly. Layer with cooked steak bites, followed by sour cream, chopped green onions, and bacon bits if using.
05 - Return the assembled potatoes to the oven for 5 minutes to heat the toppings through. Serve hot, garnished with extra green onions if desired.

01 - For a crispier potato skin, rub with kosher salt before baking and increase oven temperature to 425°F for the first 15 minutes.
