Preheat oven to 400°F (200°C). Scrub potatoes under running water and pat dry. Prick each potato several times with a fork. Rub skins with olive oil and a pinch of salt. Place on a baking sheet and bake for 45-60 minutes, until fork-tender.

While potatoes are baking, heat 2 tablespoons olive oil in a skillet over medium-high heat. Season sirloin pieces with garlic powder, smoked paprika, salt, and pepper. Add steak to the skillet in a single layer. Sear for 3-4 minutes per side until browned and cooked to desired doneness. Remove from heat and set aside.

Once potatoes are baked, carefully slice them open lengthwise and fluff the insides with a fork. Add a tablespoon of butter to each potato and gently mash the interior.

Top each potato with a generous amount of cheddar cheese, allowing it to melt slightly. Layer with cooked steak bites, followed by sour cream, chopped green onions, and bacon bits if using.

Return the assembled potatoes to the oven for 5 minutes to heat the toppings through. Serve hot, garnished with extra green onions if desired.
