Texas Trash Pie (Print Version)

# Ingredients:

→ Crust

01 - 1 pre-made pie crust (9-inch)

→ Filling

02 - 1 cup crushed tortilla chips
03 - 1 cup cooked shredded chicken (or beef)
04 - 1 cup black beans, drained and rinsed
05 - 1 cup corn, canned or frozen and thawed
06 - 1 cup diced tomatoes, fresh or canned
07 - 1 small onion, diced
08 - 2 cloves garlic, minced
09 - 1 teaspoon taco seasoning
10 - 1 ½ cups shredded cheddar cheese
11 - 2 tablespoons olive oil
12 - Salt and pepper to taste

→ Garnish

13 - ½ cup sour cream
14 - ¼ cup chopped fresh cilantro
15 - 1 jalapeño, diced (optional)

# Instructions:

01 - Set your oven to 190°C (375°F).
02 - In a large skillet, heat the olive oil over medium heat. Add diced onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
03 - Stir in the shredded chicken (or beef), black beans, corn, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
04 - Place the pre-made pie crust in a 9-inch pie dish. Sprinkle half the crushed tortilla chips on the bottom of the crust. Pour the filling mixture over the chips, spreading it evenly.
05 - Top the filling with the remaining crushed tortilla chips. Then sprinkle the shredded cheddar cheese evenly on top.
06 - Place the pie in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the pie is heated through.
07 - Allow the pie to cool for 5-10 minutes. Drizzle with sour cream and sprinkle with fresh cilantro and diced jalapeño (if using) just before serving.
