In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper until well combined.

Place the cod fillets in a shallow dish or a resealable plastic bag and pour the marinade over the fish. Ensure each fillet is evenly coated. Let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for a more intense flavor.

Grease a baking dish with a little olive oil. Lay the marinated cod fillets in the dish, skin side down (if applicable), and pour any remaining marinade over the top.

Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout. Cooking time may vary depending on the thickness of the fillets.
