Zesty Lemon Garlic Cod (Print Version)

# Ingredients:

→ Main

01 - 4 cod fillets (about 6 ounces each)

→ Marinade

02 - 3 tablespoons olive oil
03 - 4 cloves garlic, minced
04 - Zest of 1 lemon
05 - Juice of 1 lemon
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried thyme
08 - Salt and freshly ground black pepper, to taste

→ Garnish

09 - Fresh parsley, chopped
10 - Lemon slices

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper until well combined.
03 - Place the cod fillets in a shallow dish or a resealable plastic bag and pour the marinade over the fish. Ensure each fillet is evenly coated. Let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for a more intense flavor.
04 - Grease a baking dish with a little olive oil. Lay the marinated cod fillets in the dish, skin side down (if applicable), and pour any remaining marinade over the top.
05 - Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout. Cooking time may vary depending on the thickness of the fillets.
06 - Remove from the oven and let it rest for a minute. Garnish with freshly chopped parsley and serve with lemon slices on the side.

# Notes:

01 - For best results, use fresh cod fillets of uniform thickness to ensure even cooking.
02 - This dish pairs well with steamed vegetables or a light salad.
