In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and nutmeg.

Beat butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla and applesauce.

Add dry ingredients to wet ingredients and stir until just combined. Fold in nuts or raisins if using.

Pour batter into prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan, then transfer to a cooling rack.
