Thai Hot and Sour Soup (Print Version)

# Ingredients:

→ Seafood

01 - 1 1/2 pounds medium raw shrimp, whole with heads

→ Aromatics

02 - 5 stalks fresh lemongrass
03 - 15 Kaffir lime leaves, fresh or frozen
04 - 1/2 onion, cut into wedges
05 - 4-6 Thai chilies (or Thai chili paste to taste)
06 - 1 inch piece galangal root (optional)

→ Other Ingredients

07 - 1/3 cup neutral oil
08 - 6 cups water
09 - 2 tablespoons fish sauce
10 - 1 cup straw or button mushrooms, sliced
11 - 1 lime, juiced
12 - Fresh cilantro and lime wedges for garnish

# Instructions:

01 - Remove shrimp heads and set aside. Peel and clean shrimp bodies
02 - Sauté shrimp heads in oil with salt until red and crispy. Set aside
03 - Trim and cut lemongrass, slice galangal, then smash all aromatics including lime leaves, onion, and chilies
04 - Simmer aromatics in water for 5-10 minutes until fragrant. Remove tough lemongrass if needed
05 - Add mushrooms and boil 1 minute. Add shrimp and fish sauce, cook 45 seconds. Finish with lime juice and shrimp oil
