Combine eggs, egg whites, gruyere cheese, cottage cheese, salt, pepper, heavy cream, and 3 slices of crispy bacon in a blender. Blend for 30 seconds until smooth.

Spray two silicone molds with non-stick cooking spray. Fill each mold two-thirds full with the egg mixture.

Chop the remaining bacon slices and evenly distribute them among the molds.

Cover the molds tightly with aluminum foil to create a sealed environment for steaming.

Place the trivet in the Instant Pot and pour in 2 cups of water. Stack the molds on the trivet slightly offset to allow steam to circulate.

Seal the Instant Pot lid and cook on high pressure for 8 minutes. Allow the pressure to release naturally for 10 minutes, then manually release any remaining steam.

Carefully remove the molds, let cool briefly, then release the egg bites. Serve immediately or store for later.
