Creamy Beef Casserole (Print Version)

# Ingredients:

01 - 12 ounces uncooked egg noodles.
02 - 1 pound ground beef.
03 - 1 yellow onion, finely chopped.
04 - 2 cloves garlic, minced.
05 - 1 can (15 oz) tomato sauce.
06 - 1 can (15 oz) drained diced tomatoes.
07 - 1 tablespoon Worcestershire sauce.
08 - 2 teaspoons smoked paprika.
09 - Red pepper flakes to taste.
10 - Salt and black pepper to taste.
11 - 8 ounces sour cream.
12 - 8 ounces small curd cottage cheese.
13 - 1/2 cup shredded Parmesan.
14 - 2 cups shredded cheddar.
15 - Fresh parsley for garnish.

# Instructions:

01 - Boil noodles in salted water until just tender. Rinse with cold water and toss with a bit of oil.
02 - Brown the ground beef in a pan, breaking it up as it cooks. Drain off the extra fat.
03 - Add onion and garlic to beef. Cook 3 minutes. Add tomatoes, sauces and seasonings. Simmer 5 minutes.
04 - In a bowl, stir together sour cream, cottage cheese, Parmesan and cooked noodles.
05 - Put half the noodle mix in a 9x13 pan. Add half the beef and cheddar. Repeat layers, ending with cheese.
06 - Put in 350°F oven for 25-30 minutes until hot and cheese melts. Top with parsley if you like.

# Notes:

01 - Add jalapeños or cayenne for more heat.
02 - Try adding bacon bits for extra flavor.
03 - Great make-ahead meal.
