Fresh Beet and Orange Salad (Print Version)

# Ingredients:

→ Salad

01 - 4 ounces mixed spinach and arugula
02 - 4 medium beets, cooked and sliced
03 - 2 navel oranges, peeled and sliced
04 - 1/4 cup chopped walnuts
05 - 2 tablespoons feta cheese
06 - Salt and pepper to taste

→ Dressing

07 - 3 tablespoons olive oil
08 - 2 tablespoons orange juice
09 - 1 tablespoon red wine vinegar
10 - 1 tablespoon Dijon mustard
11 - 1/4 teaspoon salt
12 - 1/4 teaspoon black pepper

# Instructions:

01 - Grab your whisk and mix together the olive oil, orange juice, red wine vinegar, Dijon mustard, salt, and pepper until everything's nice and blended.
02 - Start with a bed of your mixed greens in your serving bowl. Then arrange those beautiful sliced beets and oranges in layers on top.
03 - Sprinkle your salad with crumbled feta cheese and chopped walnuts.
04 - Drizzle that fresh dressing over everything and serve it up. You can enjoy it right away at room temperature or chilled.
