Better Than Takeout Chicken Fried Rice (Print Version)

# Ingredients:

→ Main

01 - 1 pound chicken, cut into small pieces
02 - 3 cups cooked rice

→ Vegetables

03 - 1 small white onion, chopped
04 - 1 cup frozen peas and carrots, thawed
05 - 2 tablespoons chopped green onions (optional)

→ Seasonings & Oils

06 - 1 tablespoon vegetable oil
07 - 2 tablespoons sesame oil
08 - 3 tablespoons soy sauce, divided

→ Other

09 - 2 large eggs, lightly beaten

# Instructions:

01 - Heat vegetable oil and 1 tablespoon soy sauce in large skillet. Cook chicken until lightly browned and cooked through. Remove and set aside.
02 - Add sesame oil to pan. Fry onion, peas, and carrots until tender.
03 - Push vegetables aside, add beaten eggs to empty side of pan and scramble. Mix with vegetables when cooked.
04 - Add rice, chicken, and remaining soy sauce. Stir-fry until heated through. Garnish with green onions if desired.
