Easy Cajun Rice Sausage Skillet (Print Version)

# Ingredients:

→ Main Ingredients

01 - 14 ounces andouille sausage, cut into ¼-inch rounds
02 - 1 cup long grain white rice
03 - 1½ cups chicken broth
04 - 10 ounce can diced tomatoes with green chilies

→ Vegetables

05 - 1 red bell pepper, sliced
06 - 1 green bell pepper, sliced
07 - ½ yellow onion, diced
08 - 3 cloves garlic, minced

→ Seasonings & Oil

09 - 1 tablespoon Cajun seasoning
10 - 1 tablespoon cooking oil

→ For Serving

11 - Sliced green onions for garnish

# Instructions:

01 - Heat oil in a large, deep skillet over medium-high heat. Add sausage and cook for 3-5 minutes until browned.
02 - Add bell peppers and onion to the skillet. Cook with sausage for 5 minutes until vegetables are tender and lightly browned.
03 - Stir in garlic and Cajun seasoning. Cook 1-2 minutes until fragrant.
04 - Add tomatoes, rice, and broth. Bring to boil, then cover and reduce heat to low. Simmer for 20 minutes until rice absorbs liquid.
05 - Remove from heat, let rest covered for 5 minutes. Fluff rice to distribute ingredients. Top with green onions and serve.

01 - Leftovers keep in airtight container for up to 4 days
02 - Kielbasa can be substituted for andouille sausage
03 - Add diced jalapeño with the peppers for extra heat
