French Caramelized Onion Tart (Print Version)

01 - 2 sheets puff pastry, thawed overnight in refrigerator
02 - 4 cups sweet yellow onions, sliced
03 - 1 tablespoon olive oil
04 - 2 teaspoons brown sugar
05 - 1/2 teaspoon kosher salt
06 - 1 cup Gruyere cheese, shredded
07 - 2 teaspoons fresh thyme, destemmed and minced
08 - 2 tablespoons heavy cream

# Instructions:

01 - Heat oil in large deep pan over medium-high heat. Cook onions for 10 minutes until softened. Add salt and brown sugar, cook uncovered 20 minutes more until caramelized. Let cool.
02 - Preheat oven to 400°F. On parchment-lined baking sheet, overlap pastry sheets and press together to form large rectangle. Fold up edges and prick base with fork.
03 - Sprinkle cheese evenly over pastry base. Top with cooled caramelized onions. Brush edges with heavy cream and sprinkle with thyme.
04 - Bake 18-20 minutes until cheese melts and pastry is crisp. Cool 5 minutes before cutting. Garnish with extra thyme if desired.
