Cut each string cheese into three pieces. Put them in freezer for 30 minutes to firm up.

Put flour in one bowl. Beat eggs in second bowl. Mix breadcrumbs, Parmesan, Italian seasoning, garlic powder and salt in third bowl.

Roll each frozen cheese piece in flour, then egg, then breadcrumb mix. For extra crunch, dip in egg and breadcrumbs again.

Place coated bites on a baking sheet and freeze 15-20 minutes so they won't melt while cooking.

Heat oil to 350°F in a deep pan. Fry bites for 1-2 minutes until golden. Drain on paper towels.

Heat oven to 400°F. Put bites on lined baking sheet, spray with cooking spray. Bake 8-10 minutes until golden.
