Cheesy Potato Egg Delight (Print Version)

# Ingredients:

01 - 4 large eggs
02 - 1.5 tablespoons heavy cream or milk
03 - 1 1/2 teaspoons Old Bay seasoning, or to taste
04 - salt and pepper, to taste
05 - 1.5 tablespoons frying oil or clarified butter
06 - 4 cups (600g) chopped cooked potatoes
07 - 2 oz (60g) ham, chopped into cubes
08 - 1 cup shredded cheese, mix of aged cheddar and Gruyere

10 - chives

# Instructions:

01 - In a medium bowl, whisk the eggs with heavy cream and Old Bay seasoning. Season with salt and pepper, and set aside.
02 - In a large frying pan, heat the oil over medium-high heat. Add the potatoes and cook them until browned on all sides.
03 - Add the chopped ham and egg mixture to the pan. Cook briefly over low heat until the eggs are only partially cooked, ensuring they are not fully set. Season everything with salt and pepper.
04 - Sprinkle the shredded cheese evenly over the eggs and potatoes. Cover the pan with a lid and cook over low heat until the cheese is melted and the eggs are fully cooked.
05 - Transfer the scrambled mixture to plates and serve with sour cream and chopped chives.

# Notes:

01 - Instead of Old Bay seasoning, you can use Cajun seasoning, Fajita seasoning, or Chili powder.
02 - Crumble fried bacon on top if you prefer it over ham.
03 - Thinly sliced scallions can substitute for chives.
04 - Consider adding pan-fried mushrooms or bell peppers for extra flavor.
