Combine all the seasonings together in a small bowl.

In a medium to large skillet, heat oil over medium heat and add the onions. Sprinkle the seasoning over the onions and cook until soft, about 4-5 minutes. Remove from heat, add chicken to the skillet, and toss together. Set aside.

Combine the Monterey Jack and cheddar cheeses in a bowl and set aside.

Brush one side of each tortilla lightly with oil, if desired. This helps create crispier edges when cooking.

Set a large skillet over medium-low heat (or heat a griddle).

Place a tortilla in the heated skillet, oiled side down. Sprinkle a handful of cheese on one half of the tortilla, followed by about ½-⅔ cup of the chicken and onion mixture. Add more cheese on top and fold the tortilla over. Cook for 2-3 minutes per side until golden and crispy.

Cut into triangles if desired and serve hot.
