Chicken Quesadilla (Print Version)

# Ingredients:

→ Seasoning Mix

01 - ½ teaspoon salt
02 - ½ teaspoon chili powder
03 - ¼ teaspoon pepper
04 - ¼ teaspoon onion powder
05 - ¼ teaspoon garlic powder
06 - ¼ teaspoon cumin

→ Quesadillas/Assembly

07 - 1 tablespoon oil
08 - 1 large onion, diced
09 - 4 cups cooked chicken, chopped
10 - 2 cups shredded Monterey Jack cheese
11 - 1 cup shredded medium cheddar cheese
12 - 8 tortillas
13 - 2 tablespoons oil for brushing (optional)

# Instructions:

01 - Combine all the seasonings together in a small bowl.
02 - In a medium to large skillet, heat oil over medium heat and add the onions. Sprinkle the seasoning over the onions and cook until soft, about 4-5 minutes. Remove from heat, add chicken to the skillet, and toss together. Set aside.
03 - Combine the Monterey Jack and cheddar cheeses in a bowl and set aside.
04 - Brush one side of each tortilla lightly with oil, if desired. This helps create crispier edges when cooking.
05 - Set a large skillet over medium-low heat (or heat a griddle).
06 - Place a tortilla in the heated skillet, oiled side down. Sprinkle a handful of cheese on one half of the tortilla, followed by about ½-⅔ cup of the chicken and onion mixture. Add more cheese on top and fold the tortilla over. Cook for 2-3 minutes per side until golden and crispy.
07 - Cut into triangles if desired and serve hot.

01 - For extra flavor, serve with sour cream, guacamole, or salsa on the side.
