Panera Chipotle Chicken Avocado Melt (Print Version)

# Ingredients:

→ Sandwich Base

01 - 2 garlic herb focaccia bread loaves
02 - 6 ounces shredded rotisserie chicken
03 - 1 ripe avocado, sliced
04 - 4 ounces sliced gouda cheese
05 - ¼ cup fresh cilantro, chopped
06 - ¼ cup Peppadew peppers, chopped (or sweet & hot cherry peppers)

→ Chipotle Mayo

07 - ¼ cup mayonnaise
08 - 6 chipotle peppers in adobo sauce

→ For Cooking

09 - 2 tablespoons water for steaming

# Instructions:

01 - Mix chopped chipotle peppers in adobo sauce with mayonnaise until well combined. Set aside.
02 - Cut focaccia into 8 equal squares. Spread chipotle mayo on each slice. Layer cheese, avocado slices, shredded chicken, fresh cilantro, and chopped peppers on half the slices. Top with remaining bread slices.
03 - Heat a skillet over medium-high heat. Cook sandwiches for 2-3 minutes per side until golden brown.
04 - Tilt the pan, add water, and cover immediately. Let steam for 1 minute until water evaporates and cheese is perfectly melted.

# Notes:

01 - Brush avocado with lemon juice to prevent browning if making ahead
02 - Customize chipotle mayo by adding salt and minced garlic to taste
