Chocolate-Dipped Strawberry Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 1¾ cups ground graham crackers
02 - 6 tablespoons unsalted butter, melted

→ Cheesecake Filling

03 - 16 ounces cream cheese, softened
04 - ¾ cup granulated sugar
05 - 2 large eggs
06 - 1 large egg yolk
07 - 2 teaspoons vanilla extract
08 - ½ teaspoon fine sea salt

→ Topping

09 - 18 fresh strawberries, rinsed and patted dry
10 - 8 ounces 56% dark chocolate, melted

# Instructions:

01 - Mix graham cracker crumbs with melted butter. Press about 1½ tablespoons into each mini cheesecake cavity using a tamper.
02 - Beat cream cheese until smooth, gradually add sugar. Add eggs and yolk one at a time, then vanilla and salt. Mix until smooth.
03 - Bake at 325°F for 20-25 minutes until slightly puffed. Cool to room temperature, then chill for at least 1 hour.
04 - Remove cheesecakes from molds. Cover each with melted chocolate. Dip strawberries in remaining chocolate and place on top.
