Christmas Sugar Cookie Cheesecake (Print Version)

# Ingredients:

01 - Sugar cookies, crushed - 2 cups.
02 - Unsalted butter, melted - 6 tablespoons.
03 - Cream cheese, softened - 24 ounces.
04 - Granulated sugar - 1 cup.
05 - Large eggs - 3.
06 - Vanilla extract - 1 teaspoon.
07 - Sour cream - 1/2 cup.
08 - Christmas sprinkles - 1/3 cup.

# Instructions:

01 - Heat oven to 325°F. Grease 9-inch springform pan.
02 - Mix crushed cookies with melted butter. Press into pan bottom. Bake 8-10 minutes until golden.
03 - Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and sour cream.
04 - Fold sprinkles gently into batter. Pour over cooled crust.
05 - Bake 50-60 minutes until center slightly jiggles. Turn off oven, crack door, let rest 1 hour.
06 - Cool to room temperature. Refrigerate 4 hours or overnight.
07 - Top with whipped cream and extra sprinkles before serving.
