In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk milk, eggs, and vanilla. Combine wet and dry ingredients, stirring gently until just incorporated. Fold in the diced apples.

Pour 5–7 cm of vegetable oil into a deep skillet and heat to 175°C (350°F).

Drop heaping tablespoons of batter into the hot oil. Fry for 2–3 minutes per side until golden brown. Transfer to paper towels to drain excess oil.

In a bowl, whisk together powdered sugar, milk, and vanilla until smooth. Adjust consistency by adding more milk or sugar as needed.

Either drizzle the glaze over warm fritters or dip them for a complete coating. Allow to set for a few minutes before serving.
