Easy Coconut Curry Baked Cod (Print Version)

# Ingredients:

→ Coconut Curry Sauce

01 - 14 ounces full-fat coconut milk
02 - 1 tablespoon olive oil
03 - 1 tablespoon curry powder
04 - 1 teaspoon ground turmeric
05 - 1 teaspoon ground ginger
06 - 1/2 teaspoon chili powder (optional)
07 - 2 garlic cloves, minced
08 - 1 tablespoon lime juice
09 - Salt and pepper to taste
10 - 1 tablespoon honey (optional)

→ Fish

11 - 4 cod fillets (6 ounces each)
12 - Salt and pepper to taste
13 - Fresh cilantro or parsley for garnish
14 - Lime wedges for serving

# Instructions:

01 - Heat olive oil in a medium saucepan and cook your minced garlic until it's fragrant, about a minute.
02 - Add your curry powder, turmeric, ginger, and chili powder if using. Let them cook for a couple minutes to wake up those flavors.
03 - Pour in the coconut milk and bring it to a gentle simmer. Add lime juice, seasonings, and honey if using. Let it bubble away for about 5 minutes to thicken up.
04 - Heat your oven to 375°F. Season those cod fillets with salt and pepper and lay them in a baking dish. Pour your coconut curry sauce all over.
05 - Bake for 20-25 minutes until the fish flakes easily. Finish with fresh herbs and serve with lime wedges.
