Easy Boursin Chicken in Herb Sauce (Print Version)

01 - Large chicken breasts (2)
02 - Garlic powder (½ teaspoon)
03 - Salt and pepper to taste
04 - Olive oil (1 tablespoon)
05 - Butter (1 tablespoon)
06 - Medium onion, chopped (½)
07 - Low-sodium chicken broth (¾ cup)
08 - Boursin Fine Herbs & Garlic cheese, softened (5.2 oz package)
09 - Chopped parsley for garnish (1-2 tablespoons, optional)

# Instructions:

01 - Slice chicken breasts lengthwise into 4 thinner pieces. Season with garlic powder, salt, and pepper.
02 - Heat oil and butter in skillet over medium-high heat. Cook chicken 5-6 minutes per side until done. Remove to plate.
03 - In same skillet, sauté onions until softened and lightly browned, about 5 minutes.
04 - Add chicken broth and Boursin cheese, stirring until smooth. Simmer 5 minutes, then add optional parsley.
05 - Return chicken to pan with any accumulated juices. Warm through and adjust sauce thickness if needed. Season to taste.

01 - Chicken is done at 165°F internal temperature
02 - Sauce can be thinned with more broth if needed
03 - Regular broth may make sauce quite salty
