Creamy Tortellini Soup (Print Version)

# Ingredients:

01 - Olive oil - 1 tablespoon.
02 - Butter - 1 tablespoon.
03 - Onion, diced - 1.
04 - Garlic cloves, minced - 2.
05 - Red pepper flakes - 1 pinch.
06 - All-purpose flour - 1/4 cup.
07 - Vegetable broth - 3 cups.
08 - Diced tomatoes - 14.5 ounces.
09 - Tomato sauce - 8 ounces.
10 - Dried basil - 1/2 teaspoon.
11 - Italian seasoning - 1 teaspoon.
12 - Cheese tortellini - 8 ounces.
13 - Parmesan cheese, grated - 1/2 cup.
14 - Fresh spinach leaves - 1 1/2 cups.
15 - Heavy cream - 1/2 cup.
16 - Fresh basil, chopped - 1/4 cup.

# Instructions:

01 - Heat oil and butter over medium heat. Cook onion 5 minutes, then add garlic.
02 - Stir in flour and cook 1 minute. Add broth, tomatoes, sauce and seasonings.
03 - Bring to gentle boil. Add tortellini and cook until tender.
04 - Remove from heat. Stir in spinach, parmesan, cream and fresh basil.

01 - Can add sausage or extra vegetables.
02 - Works well in slow cooker.
03 - Freezes well without pasta and dairy.
