# Ingredients:

01 - 1 large egg
02 - 20 grams feta cheese
03 - 1 small tortilla or slice of toasted bread
04 - 1/4 avocado

05 - Dried oregano
06 - Red pepper flakes
07 - Cooking oil spray or olive oil spray
08 - Lemon juice
09 - Pickled onions for garnish
10 - Chili oil for garnish

# Instructions:

01 - Start with a quick spray of oil in your small frying pan, then sprinkle that feta all around, making sure to cover the edges too.
02 - Let the feta sizzle over medium heat for a couple minutes until it starts to melt. You want it golden but not burnt. Then crack your egg right in the middle.
03 - Sprinkle some dried oregano and red pepper flakes over your egg, then let it cook just how you like it - whether that's with a runny or firm yolk.
04 - While the egg's cooking, warm up your tortilla and spread that smashed avocado on top. Give it a little squeeze of lemon juice.
05 - Once your egg is perfect and that feta's formed a golden crust, carefully slide it onto your prepared tortilla. Top it off with some pickled onions and a drizzle of chili oil.
