Deviled Egg Pasta Salad

Featured in Complement Your Main Course.

You've got to try this genius twist on deviled eggs that's become my potluck secret weapon! Instead of fussing with filling individual egg halves, I turned those same amazing flavors into the best pasta salad ever. Start with good old elbow macaroni, then make this incredible dressing using the egg yolks mixed with mayo and my special blend of seasonings - I always add a splash of pickle juice for extra zing! Fold in the chopped egg whites and plenty of crunchy celery and red onion, then let it hang out in the fridge where all the flavors get even better. The first time I brought it to a family gathering, my aunt who's super picky about her deviled eggs actually asked for the recipe! I love playing around with different mustards - grainy Dijon is amazing in it - and sometimes I use rotini pasta to catch more of that creamy dressing. Perfect for summer cookouts or anytime you want something familiar but a little different. Plus it's way easier to transport than regular deviled eggs!```
