Place octopus in a pot and cover with water. Bring to a boil and cook for 40 minutes.

Remove octopus, rinse and place in a bowl. Drizzle with olive oil, add chopped garlic, and let rest at room temperature for 30-60 minutes.

Preheat gas grill to medium-high heat and slice octopus tentacles.

Grill tentacles for 3-4 minutes per side until nicely charred.

Place in bowl, drizzle with olive oil and lemon juice. Season with salt, pepper, oregano, and parsley. Add extra chopped garlic if desired.
