Easy Tender Grilled Octopus (Print Version)

# Ingredients:

01 - 2 pounds fresh octopus (baby, medium or large)
02 - Olive oil
03 - 2 garlic cloves, roughly chopped
04 - Juice from 1 lemon
05 - Salt and pepper to taste
06 - 1/2 teaspoon dried oregano
07 - 2 teaspoons chopped fresh parsley

# Instructions:

01 - Place octopus in a pot and cover with water. Bring to a boil and cook for 40 minutes.
02 - Remove octopus, rinse and place in a bowl. Drizzle with olive oil, add chopped garlic, and let rest at room temperature for 30-60 minutes.
03 - Preheat gas grill to medium-high heat and slice octopus tentacles.
04 - Grill tentacles for 3-4 minutes per side until nicely charred.
05 - Place in bowl, drizzle with olive oil and lemon juice. Season with salt, pepper, oregano, and parsley. Add extra chopped garlic if desired.

# Notes:

01 - For best results, clean octopus by removing beak and eyes before cooking. Freezing overnight can help tenderize the meat.
