Easy Taco Pasta Dinner (Print Version)

# Ingredients:

01 - 1 lb ground beef
02 - 1/2 cup finely chopped onion
03 - 1/2 tablespoon minced garlic (2 cloves)
04 - 2 cups diced red bell peppers
05 - 2 tablespoons low sodium taco seasoning
06 - 3 cups medium shell pasta (10 oz)
07 - 1 tablespoon tomato paste
08 - 2 cups beef broth
09 - 2 cups water
10 - 1 cup shredded cheddar cheese

# Instructions:

01 - Spray a large pan or pot with olive oil spray and heat it over medium-high heat for 3 minutes.
02 - Add the ground beef, onion, garlic, and bell peppers to the pan. Cook for 10 minutes or until the beef is fully cooked and no longer pink.
03 - Add the dry pasta, taco seasoning, tomato paste, beef broth, and water to the pan. Stir well to combine. Cover the pan and bring it to a boil, which will take approximately 5 minutes.
04 - Once boiling, remove the cover and reduce the heat to medium. Stir every few minutes for 10-12 minutes or until the pasta is cooked and the liquid has reduced.
05 - Remove the pan from the heat and add the shredded cheddar cheese. Stir until the cheese is melted and evenly combined.

01 - This taco pasta can be stored in the refrigerator for up to 4 days in an airtight container.
02 - You can use other pasta shapes such as rotini, penne, or farfalle as alternatives.
