Garlic Butter Beef Bites & Potatoes (Print Version)

# Ingredients:

01 - Beef stew meat, bite-sized - 1 1/2 pounds.
02 - Baby potatoes, halved - 1 pound.
03 - Unsalted butter, melted - 4 tablespoons.
04 - Garlic cloves, minced - 3.
05 - Onion powder - 1 teaspoon.
06 - Smoked paprika - 1 teaspoon.
07 - Dried thyme - 1/2 teaspoon.
08 - Dried rosemary - 1/2 teaspoon.
09 - Salt - 1/2 teaspoon.
10 - Black pepper - 1/4 teaspoon.
11 - Beef broth - 1/4 cup.
12 - Olive oil - 1 tablespoon.

# Instructions:

01 - Heat oil in skillet over medium-high. Brown beef pieces 2-3 minutes per side. Transfer to slow cooker.
02 - Place halved baby potatoes in slow cooker with beef.
03 - Mix melted butter, garlic, and all seasonings. Pour over beef and potatoes.
04 - Pour beef broth into slow cooker.
05 - Cover and cook on low 6-8 hours or high 3-4 hours until beef is tender.

# Notes:

01 - Add cream at end for extra richness.
02 - Can use sweet potatoes instead.
03 - Root vegetables work well as additions.
