Easy Garlic Butter Shrimp Rice (Print Version)

# Ingredients:

→ Rice Base

01 - 1 onion, finely chopped
02 - 4 garlic cloves, crushed
03 - 2½ cups white rice
04 - ½ cup white wine (optional)
05 - 400g (14 oz) crushed tomatoes
06 - 4 cups chicken or fish stock
07 - 2 cups frozen peas
08 - 1 teaspoon salt
09 - Fresh ground pepper to taste

→ Shrimp

10 - 500g (1lb) shrimp/prawns, shelled and deveined
11 - 2 tablespoons olive oil
12 - Salt and pepper to taste

→ Garlic Butter Sauce

13 - 2 tablespoons butter
14 - 4 garlic cloves, crushed
15 - ½ cup white wine
16 - ½ cup chicken or fish stock
17 - 1 tablespoon fresh lemon juice

→ For Serving

18 - Fresh chopped parsley
19 - Lemon slices

# Instructions:

01 - Heat olive oil in a large, deep sauté pan. Cook onion and garlic until fragrant. Add rice, stir to coat with oil. Pour in wine if using and simmer briefly.
02 - Add tomatoes, stock, and peas to the rice. Season with salt and pepper. Cover and simmer for 15 minutes until rice is just tender and liquid is absorbed.
03 - In a separate hot pan, fry shrimp until golden on both sides. Remove shrimp and set aside.
04 - In the same pan, melt butter with garlic. Add wine to deglaze, then pour in stock and lemon juice. Simmer 5 minutes until slightly reduced.
05 - Once rice is done, add shrimp and cover. Let steam 5 minutes. Serve with garlic butter sauce, fresh parsley, and lemon slices.

# Notes:

01 - You can use either chicken or fish stock based on preference
02 - White wine can be omitted if desired
03 - Make sure not to overcook the shrimp as they'll continue cooking when steaming with the rice
