In a large pot, bring salted water to a boil and add the halved baby potatoes. Cook for about 10-12 minutes, or until tender. Drain and set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steak bites in a single layer, making sure not to overcrowd the pan. Season with salt and pepper. Cook for about 2-3 minutes on each side for medium-rare, adjusting the time for your preferred doneness. Remove from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.

Add the cooked steak bites back to the skillet along with the boiled potatoes. Gently toss everything in the garlic butter sauce until well-coated. Cook for an additional 1-2 minutes to heat through, and adjust seasoning if necessary.

Remove from heat and garnish with fresh parsley and an optional squeeze of lemon juice for brightness. Serve immediately.
