Garlic Parmesan Chicken Skewers (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1½-2 pounds chicken thighs or tenders, cut in 1-inch pieces
02 - 1½ teaspoons seasoning salt
03 - 2 tablespoons mayonnaise
04 - 1 tablespoon grated parmesan cheese
05 - ½ teaspoon garlic powder

→ Seasoning Sauce

06 - 5 tablespoons butter, softened
07 - 4 cloves garlic, minced or pressed
08 - 1 tablespoon fresh parsley, chopped
09 - 1 tablespoon parmesan cheese, grated
10 - 1-2 teaspoons chili crunch (or chili crisp)
11 - 1 teaspoon lemon juice

# Instructions:

01 - Place chicken pieces in a bowl and season with the seasoning salt, mayonnaise, garlic powder, and grated parmesan. Mix until the chicken is evenly coated. Let marinate for at least 20 minutes, though 4-16 hours in the refrigerator is ideal for maximum flavor.
02 - Combine the softened butter, minced garlic, fresh parsley, parmesan cheese, chili crunch (or crisp), and lemon juice in a bowl. Use a fork to mix everything together into a compound butter. Microwave for about 5 seconds just to slightly loosen the mixture for easier basting.
03 - Thread the marinated chicken pieces onto metal or wooden skewers (if using wooden skewers, soak them in water first to prevent burning). Preheat your air fryer to 400°F or prepare an outdoor grill.
04 - Place 4-7 skewers in the preheated air fryer, being careful not to overcrowd. Cook for 6 minutes, then flip the skewers and continue cooking for another 3 minutes. If grilling, cook over medium-high heat, turning occasionally until nearly done.
05 - Check that the chicken has reached at least 150°F internal temperature, then baste with the prepared garlic butter sauce. Cook for 1 minute more, then flip, baste the other side, and cook for another 30-40 seconds until the chicken reaches 165°F internal temperature.
06 - Remove the skewers from the air fryer or grill, sprinkle with additional parmesan cheese or fresh parsley if desired, and serve warm with your favorite side dishes.
