Preheat the oven to 425°F (220°C). Place your baking dish or skillet in the oven while it's preheating to help the batter puff up.

If using a high-speed blender, add eggs, flour, sugar, vanilla extract, salt, and milk, then blend until smooth (about 30 seconds). If mixing by hand, add eggs, flour, sugar, vanilla extract, and salt into a large bowl and whisk until smooth. Gradually add milk and mix until the batter is smooth. Set aside.

Peel the apples, cut them into quarters, remove the cores, and slice into even pieces.

Heat 2 tablespoons butter in a large frying pan over high heat. Add apples, spread them evenly, and allow them to cook without stirring for 2 minutes until browned. Stir and add sugar, vanilla extract, lemon juice, and cinnamon. Cook for an additional 2-3 minutes until the apples are softened and slightly browned.

Remove the preheated baking dish from the oven and add 2 tablespoons butter. Let the butter melt as you move it around the dish to coat the base and edges evenly.

Add the cooked apples to the baking dish. Pour the pancake batter over the apples evenly. Return the dish to the oven and bake for 15 minutes or until golden and puffed up.

Remove from the oven, cut into portions, and serve immediately. Note that the pancake will deflate shortly after being taken out of the oven; this is normal.
