Pulse the Golden Oreos in your food processor until they're evenly crumbled. Add the softened cream cheese and keep pulsing until everything's smooth and well mixed. Stop and scrape down the sides a couple times to get it all blended.

Scoop out about a tablespoon of the mixture and roll it between your palms to make a ball. Place each one on a parchment-lined baking sheet. Pop them in the fridge (or freezer if you're in a hurry) for about 20 minutes until they're firm.

Melt half of your white chocolate in the microwave at 50% power, stirring every 30 seconds until smooth. Use two forks to dip each chilled truffle, coat it completely, and place it back on the parchment. Add your sprinkles or Oreo crumbs right away before the chocolate sets.

Once all your truffles are dipped and decorated, pop them back in the fridge for about 5 minutes until the chocolate coating is completely set.
