Grandma’s Famous Peach Cobbler (Print Version)

# Ingredients:

→ Fruit Filling

01 - 6 fresh peaches, peeled, pitted, and sliced
02 - 50 g granulated sugar
03 - 1 teaspoon ground cinnamon
04 - 1 tablespoon freshly squeezed lemon juice

→ Batter

05 - 125 g all-purpose flour
06 - 1.5 teaspoons baking powder
07 - 0.5 teaspoon salt
08 - 100 g granulated sugar
09 - 120 ml milk
10 - 115 g unsalted butter, melted
11 - 1 teaspoon vanilla extract
12 - 1 teaspoon almond extract (optional)

→ Serving

13 - Whipped cream or vanilla ice cream

# Instructions:

01 - Set the oven to 175°C and allow to completely preheat.
02 - In a bowl, gently toss sliced peaches with 50 g sugar, cinnamon, and lemon juice. Let the mixture marinate for 10 minutes.
03 - In a separate bowl, whisk together the flour, baking powder, salt, and remaining 100 g sugar.
04 - In another bowl, whisk together the milk, melted butter, vanilla extract, and almond extract if using.
05 - Pour wet ingredients into the dry mixture and stir just until combined. Do not overmix; a few lumps are acceptable.
06 - Evenly spread the batter in a greased 33x23 cm baking dish.
07 - Spoon marinated peaches and their juices evenly over the batter without stirring.
08 - Place dish in preheated oven. Bake for 35–40 minutes until the surface is golden brown and bubbly and a toothpick inserted into the batter comes out clean.
09 - Let cool slightly, then serve warm topped with whipped cream or vanilla ice cream as desired.

# Notes:

01 - Overmixing the batter may cause a dense texture. Use ripe, fragrant peaches for the best flavour.
